    Hi Mates,

    Cook this & the Mrs will Love you for sure !!!

    BURMESE CHICKEN

    Prep Time; 15 to 30 Minutes
    Total Cooking Time; 45 to 60 Minutes

    INGREDIENTS

    2 Onions (Finely Chopped)
    2 Stems of Lemon Grass
    (I didn't have any so Sliced up about 5x Spring Onions)
    1.5kg of Chicken Pieces
    (I used Legs [Drumsticks], about 9 for the 3 of us)
    2 Tablespoons of Olive Oil
    3 Bay Leaves
    1/4 teaspoon Chilli Powder
    6 Cloves of Garlic, CRUSHED & Diced Finely
    1 Tablespoon Grated Fresh Ginger
    2 teaspoons of Turmeric
    1/2 teaspoon of Ground Cardamom
    1 Cinnamon Stick
    1/2 teaspoon of Ground Cumin
    1/2 teaspoon of Ground Coriander
    1/2 teaspoon of Ground Ginger
    1 Cup Chicken Stock
    (I Mixed 2x Chicken Stock Cubes & Boiling Water)


    METHOD

    1; Quickly lightly Brown the Chicken Pieces in a little Oil & Set aside.

    2; Cook Onion, & Spring Onions (If that is what you are using) in Olive Oil, until Soft. (Use a reasonable size Pot that has a Lid)

    3; Add Bay Leaves, Lemon Grass (If that is what you are using), Chilli Powder, Garlic, Fresh Ginger, Turmeric & ALL other Spices.
    Cook stirring over Medium Heat for a Minute or until Fragrant.
    Add Chicken Pieces & stir to Coat.

    4; Pour in the Chicken Stock & Simmer for 45 to 60 minutes, or until Chicken is Tender.
    I did it for about 1 Hour & 15 minutes & the Chicken was falling off the Bone.

    SERVE ON A BED OF RICE.

    Mate, in all Honesty, this is so Easy, & Tastes MICKEY MOUSE !!!
    Boys Loved it & a Very Cheap Meal

    Chicken Drumsticks from my Butcher $2.99kg.
    Add a few Onions & Spices, you can feed the Family for next to nothing.
    PLUS,
    It is so Easy, & tastes FANTASTIC !!!

    Definitely NOT a Hot Curry (Very Mild but Tasty), so should be fine for the Younger Kids.
