    CHILLI PESTO

    This is BRILLIANT with any Red Meat, especially Steak.

    Ingredients

    Long Red Chilli's (Long Green if Red is Unavailable)
    Garlic
    Fresh Oregano
    Olive Oil

    Simply Crush then Dice Garlic Cloves to about 1 to 2mm Cubes.
    Chilli's, remove the Seeds for this one, then Cut & Dice to 1 to 2 mm Cubes.

    No Point talking about amounts as it will depend on how BIG your Jar is or How much you want to make !!
    Ratio; Approx., 4 Garlic Cloves per Chilli

    Place in a Jar with a tight fitting Lid, in 2 Layers of EQUAL amounts of both Chilli & Garlic.

    Finely Chop FRESH Oregano, & add another Layer in the Jar, until equal amounts with the Chilli & Garlic.

    Finally add Olive Oil until covered, & stir until ALL 3 Ingredients are well Combined. Top Up Olive Oil to just above the Top, & Store in the Fridge for up to a couple of months.

    NOTE; seems to get better with age like a Curry

    Absolutely MAGIC with Steak, Sausages or any other Red Meat.

    ONION JAM

    This is Brilliant with Beef Sausages & Mashed Potato.

    Quantity will depend upon how much you want to make & the number you are Cooking for.
    So numbers are "Ball Park" ONLY.

    Ingredients

    2x Brown Onions (Finely Sliced)
    4x Garlic Cloves, Crushed & Finely Chopped
    1 or 2x Long Green Chilli's, seeds removed Finely Chopped.(According to Taste)
    Olive Oil
    Sweet Soy Sauce
    OR
    Normal Soy Sauce & a Tablespoon or so, of Raw/Brown Sugar.

    Method

    Heat a little Olive Oil in a Wok, or Non Stick Pan.
    Cook Onions, Garlic & Chilli on Medium Heat until Soft & just starting to Brown.
    Add Sweet Soy or Normal Soy & Brown Sugar while Stirring, & Simmer.
    Reduce Heat, & continue to Simmer on Low, until the Soy has thickened to a Nice Jam Consistency.

    Serve as a Side with Sausages, or over the Top.
    or
    Place over Mashed Potato.

    Makes the Boring every day, a little more Exciting  Cool

    My favorite sauces will be cincalok + onion. It is super easy to make and serve best with fired material (seafood, fish fillet...)

    Simply mix the fresh cincalok with fresh onion and a lil bit lime juice + sugar. Then serve immediately : )
