CHUNKY CHICKEN SOUP
More like a Meal in a Bowl than a Soup
OK Ahmet, here you go try this one Mate.
Absolutely Fantastic Mate
Cheap, & Easy.
You can easily get two Meals out of this.
Serves 6 to 8
Cooking time ~30 to 35 minutes
INGREDIENTS;
A dash of Olive Oil
400gm can of Italian Peeled Tomatoes.
1 Tablespoon of Tomato Paste
3 to 4 Cups of Chicken Stock
(3 Stock Cubes in 500ml of Boiling Water, then Top it up with water is easiest)
750 to 850 grams of Skinless Chicken Breast Fillets cut into about 2cm Cubes. (about 2 Fillets at my Butcher)
3 or 4 Medium Potatoes, peeled & cut into 1 to 2 cm Cubes.
2 Large Carrots, peeled & sliced
3 Medium Brown Onions, peeled & cut into Bite Size Pieces. [easiest way is to cut in half across the rings, then segment into 6 or 8]
4 Celery Sticks, sliced
1 Tablespoon of chopped fresh Oregano (or a teaspoon of dried)
1/2 teaspoon of Freshly Ground Black Pepper
250 to 300gms of Green Beans, cut into about 3cm pieces if fresh (Frozen are fine)
Fresh Parsley or Oregano Sprigs for Garnish.
METHOD
1; (Part A) In a Large, Heavy Based Pot, combine the Chicken Stock & tin of Tomatoes, & bring to the Boil over High Heat.
1; (Part B) At the same time, In a Wok or Fry Pan, saute the Onions in a little Olive Oil until just going translucent (going soft), add the Chicken pieces & Stir Fry over Medium/High Heat until they turn white, & are just starting to turn Golden.
2; Add the Potatoes, Carrots, Celery, chopped Oregano, Pepper & Tomato Paste to the Chicken Stock & Tomato's, as soon as it comes to the Boil. Stir
3; As soon as the Onions & Chicken, are ready, transfer to the Pot full of the other ingredients. Stir.
Bring back to the Boil, reduce Heat to Low, cover & Simmer for 10 to 15 minutes stirring occasionally.
4; Add the Beans, & increase Heat slightly to return to the Boil.
Again reduce Heat to Low, cover & Simmer until the vegetables are tender, around 10 minutes.
Ladle Soup into Bowls & serve with a Sprig of Oregano or Parsley.
